Peel the mango, wash and dry the pepper, peel the avocado pear and the ginger, then dice everything. Drain the crab and break it up, removing any coarse strands. Make a well-seasoned saffron mayonnaise. Fill 4 glasses by alternating layers of ingredients with a layer of mayonnaise, keep in a cool place, and sprinkle with finely-chopped coriander before serving.
