Production of Aussières' Chardonnay is limited to a few hectares on the estate; the objective is to produce a fresh, delicate wine that offers excellent harmony of fruit. Located on the coldest areas, the plots are cultivated using the most modern techniques, with grass cover crop to control vigour and drip irrigation to optimize ripening, as the summer can be extremely dry in this region. Due to its success, most of the grapes used to make this wine are now purchased from outside the vineyard, but the blending process is based on the wine from the Aussières grapes and purchases are made from terroirs that preserve our original style.
