Saga Pauillac
Accompanied by duck breast with cherries

Ingredients
- 2 duck breasts
- Salt, pepper
- 24 cherries
- 4 sprigs fresh thyme
For 4 persons Preparation time: 10 minutes | Cooking time: 25 minutes
The recipe:
Score the fat of the breasts, place them in a frying pan skin side down, cook for 15 minutes over medium heat to melt the fat, gradually draining it from the pan, turn the breasts over, sear them meat side, remove from the heat and keep warm under tin foil. Cook the pitted cherries with the fresh thyme in the pan used to fry the breasts for 5 minutes over high heat, season with salt and pepper. Dice the duck breasts, skewer one cube of duck breast and two cherries, serve immediately.
The wine:
Aromas of candied black cherry and spice, the powerful structure of the wine together with its long finish require a full-bodied fruity dish.
