Légende Bordeaux white
Accompanied by mango salad with crab

Ingredients
- 1 mango
- 1/2 red pepper
- 1 avocado pear
- 1 tin "Chatka" king crab
- 1 root ginger
- 1 bunch fresh coriander
- 1 egg yolk, mustard, olive oil
- salt, pepper
- saffron pistils
For 4 persons Preparation time: 15 minutes
The recipe :
Peel the mango, wash and dry the pepper, peel the avocado pear and the ginger, then dice everything. Drain the crab, break it into crumbs, removing any coarse strands. Make a well-seasoned saffron mayonnaise. Fill 4 glasses by alternating layers of ingredients with a layer of mayonnaise, keep in a cool place, and sprinkle with finely-chopped coriander before serving.
The wine :
The fruity aromas, the fresh and lively finish of the wine are a perfect match for the slightly acidulous notes of the mango and the iodized flavour of the crab.
Serve with a young vintage of Légende Bordeaux white.
