Légende Bordeaux Rouge / Blanc
STRAWBERRY TARTAR, ORANGE WAFERS

Ingredients
• 250 g organic strawberries
• A few fresh mint (or verbena) leaves
• The zest and juice of one organic orange
• 80 g organic caster cane sugar
• 1 teaspoon of organic quinoa flour
• 50 g organic unsalted butter
• 1 vanilla bean
• 1 small stick of cinnamon
• 60 g nibbed almonds
For 4 persons Preparation time: 30 min
This is an unusual recipe that is easy to make and has a delicious fruity flavour!
Melt the butter. Finely chop the zest.
Mix the zest, sugar, flour and almonds. Mix in the orange juice and softened butter, leave to chill for an hour and 30 minutes.
Using a teaspoon, place small pieces of the dough on a baking sheet covered with parchment paper. Flatten the dough to make a circle with a diameter of about 6 cm (slightly more than 2 inches). Repeat this operation, leaving 4 cm between each circle. Preheat the oven to 160°C. Bake for 5-8 minutes.
Place the mint leaves, vanilla and cinnamon in a saucepan with 100 ml of water, add the sugar, bring to the boil and turn off the heat. Allow to cool.
Briefly rinse the strawberries, hull them and cut them into small pieces. Place in small glasses with the mint syrup and spices. Keep chilled.
Serve the tartar with the wafers.
WINE SUGGESTION:
The very fragrant ingredients in this recipe demand to be matched either by an equally powerful wine, such as a sweet Sauternes, or a light exuberant wine that will bring a dimension of freshness, such as Légende Bordeaux Blanc or Légende Bordeaux Rouge from Domaines Barons de Rothschild (Lafite). Served chilled, they would be an excellent choice, especially in the summer.

This wine is a well-balanced blend of traditional grape varieties consisting of Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot.
Légende, Bordeaux Blanc
In the same spirit as the Bordeaux Rouge, Légende Bordeaux Blanc is made with Sauvignon Blanc, Sémillon and, in some vintages, Muscadelle.
