CHATEAU RIEUSSEC
Poached pears with spices

Ingredients
- 4 pears
- 440g sugar
- 1 litre water
- 1 vanilla pod
- 1 cinnamon stick
- 2 star aniseed
- 2 cardamom seeds
- 2 tablespoons pistachio nuts
For 4 persons Preparation time: 20 min | Cooking time: 30 min
Split the vanilla pod, scrape it and place it in the litre of water with the other spices and the sugar. Bring to the boil, then reduce the heat, add the peeled pears and simmer, turning regularly. Leave to cool completely.
Take some of the syrup and reduce it. Pour it over the pears and serve with vanilla ice-cream and crushed pistachios.
Serve with a fifteen year-old Château Rieussec.
