Saga Bordeaux Red
Accompanied by Lamb Tajine

Ingredients
- 1 shoulder of lamb
- 2 large quinces
- 4 baby carrots
- 4 shallots
- 2 cloves
- 1 clove of garlic
- 1 onion
- 1 small piece of fresh ginger
- 1 small bunch fresh coriander
- Salt, pepper, powdered cumin
- Olive oil
- 3 soup spoons of liquid honey
For 4 persons Preparation time: 20 min | Cooking time: 2 h
Mix the honey with 150 ml of water and the peeled and sliced ginger and onion. Season the shoulder of lamb with salt, pepper and cumin, place it in a baking dish with the quinces, cut into wedges and drizzled with the honey and water mixture. Cook at 150°C (gas mark 3), for one hour 30 minutes, basting regularly. Cut the meat and the quinces into pieces, peel and cut the carrots into sticks and the shallots into quarters. Sauté everything together in olive oil for 15 minutes, add the juices from the roasting pan. Serve with couscous with raisins and the chopped coriander.
Wine suggestion:
Saga Bordeaux Rouge.
A solid, full-bodied red wine, with clean flavours and good aromatic balance.
Lamb is the perfect companion for the wines of Bordeaux, the hint of spiciness in the tajine delicately complements this wine's complexity.
