Légende bordeaux red
Accompanied by rabbit galantine

Ingredients
- 2 saddles of rabbit of 500g (5½ lbs), boned with kidneys
- 100g (4oz) streaky bacon
- 2 shallots
- 12 sage leaves
- Salt, pepper
For 4 persons Preparation time: 30 minutes | Cooking time: 30 minutes
The recipe :
Finely chop the rabbit kidneys, the peeled shallots and the bacon – rind removed. Season with pepper. Lay out the saddles, season with salt and pepper, cover with sage leaves. Add a layer of chopped ingredients along the centre of the saddle, roll the edges inwards, tie tightly together into small packages. Roast for 30 minutes in the oven; turn the meat over after 15 minutes. Leave to cool in the oven after turning it off. Slice, serve with candied red berries in vinegar.
The wine :
A well-balanced, elegant and complex wine with notes of fresh red fruit and liquorice, presenting an excellent spicy finish. Both the aromas and texture make this dish a perfect partner.
Serve with a young vintage of Légende Bordeaux red.
