Carruades de lafite
Accompanied by grilled tilefish with vineshoots, sea funnels

Ingredients
- 1 tilefish, 1kg300
- 1 lemon
- 2 tomatoes
- 1 branch of fresh thyme
- high quality unrefined salt
- 2 bay leaves
- extra virgin olive oil
- basil
For 4 persons Preparation time: 1 hour
The recipe:
Choose a fine tilefish and clean it, and remove gills (do not scale it).
Marinade it in thyme, bay leaves, lemon, olive oil, and unrefined salt.
Prepare it as a brazed dish with sea funnel shoots, and then grill it.
Serve it with fresh sauce: (diced tomato, fresh peeled lemon skins, chopped basil, olive oil, salt and pepper)
then add very fresh sea funnels, pan-fried in olive oil
