The cellar
The vat room and cellars were extended and totally renovated in 2003
Each parcel is isolated initially in order to judge its quality. Several tastings from each vat are then performed in December, to ensure a strict selection of fine wines. The cellar is separate from the vineyard and located in the heart of Pauillac.
Each vintage ages in oak barrels. The barrels are all made at the Domaine’s cooperage. The length of time the wine spends in barrels varies, depending on the vintage, between 10 to 18 months, during which the wines are periodically decanted and cleared with egg whites.
The average production of Château Duhart-Milon, Moulin de Duhart and Baron de Milon is 30,000 cases per year, bottled at the Château.
